Spinach is a cool-weather vegetable and they are best sown in late winter or early spring for a fast crop and again in late summer or early fall, after the hottest temperatures have passed. Spinach germination can proceed at temperatures near freezing, the seeds sprout best at 15 to 20 degrees meaning it would be best to start growing the seeds indoors. It needs at least three to four hours of sun per day. Spinach welcomes shade, as it bolts easliy if in full sun.
