Fresh Herb Potato Salad

Use red baby potatoes cut them into cube-like pieces and bring to a boil until soft. Create the dressing consisting of 1/4 olive oil, 1 lemon juice, garlic, salt and pepper. As the potatoes are cooling, chop herbs like oregano, rosemary, tarragon or dill, and Thyme. Assemble the potato salad in a medium-sized bowl, top with the herbs, and pour the dressing over top, and mix until well coated. Season with more salt and pepper to taste.

The History of Organic Thyme

Organic thyme has a rich history dating back to ancient civilisations, where it was revered for both culinary and medicinal purposes. Originating in the Mediterranean, it was used by the ancient Greeks and Romans for its aromatic flavour and believed healing properties. Over time, thyme became a staple in European cuisine and traditional medicine, spreading to the UK during the Middle Ages, where it was valued for its antiseptic qualities. Today, organic thyme is still cherished for its flavour and health benefits, continuing its legacy of culinary and wellness traditions.
