Fluffy Waffles

This crispy, fluffy, and very simple waffle recipe is made with only pantry ingredients.

Ingredients
  • 1 1/2 cups of your favourite unsweetened nut, coconut or soy milk
  • 2 tsp apple cider vinegar (ACV)
  • 240 g organic plain flour 
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1 tbsp organic Demerara cane sugar or organic maple syrup
  • 1/4 cup melted coconut oil or melted plant butter 
  • 1/2 tsp vanilla extract
  • Extra organic maple syrup to serve
Method
  1. Mix the coconut milk, vanilla extract and ACV together in a small bowl and set aside for about 5 minutes - this will make the vegan buttermilk.

  2. In a large bowl, sift the flour, baking powder and salt.

  3. Add the sugar, melted butter/coconut oil, buttermilk mixture into the dry ingredients and using a spatula, gently mix the batter until all ingredients are combined. The batter should be thick for you to scoop.

  4. Turn on and preheat your waffle maker to about medium for a crisp, golden fluffy waffles.

  5. Using a ½ cup (125 ml) measuring cup, scoop out some batter and pour/spread into the middle of the greased waffle maker. Close and let cook until the steam has completely stopped from the waffle maker. Don't open it before the steam is finished!

  6. Remove each waffle and place on a baking sheet in your oven or toaster oven on "warm" or 200F/95C to keep warm and crispy until you are finished with the entire batter.

  7. Serve with a drizzle of organic maple syrup and your favourite toppings.
