Ways to Use Organic Wild Rice

Wild Rice Salad

Combine cooked organic wild rice with diced vegetables such as bell peppers, cucumber, and cherry tomatoes. Toss with a zesty vinaigrette made from olive oil, lemon juice, and fresh herbs like parsley and mint. Serve chilled as a refreshing side dish.

Stuffed Mushrooms

In a pan, sauté onions, garlic, and a medley of diced vegetables. Mix the sautéed veggies with cooked wild rice, adding a sprinkle of herbs with a handful of cooked black beans. Stuff the Portobello mushrooms with the mixture, top with a generous layer of plant-based cheese, and bake until the mushrooms are tender and the filling is golden and aromatic.

Sweet Black Rice Pudding

In a saucepan, combine washed wild rice, coconut milk, sweetener and a pinch of salt. Bring it to a gentle boil. Reduce the heat to low, cover the saucepan, and let it simmer for approximately 40-45 minutes, or until the rice is tender and the mixture has thickened, stirring occasionally. Once the rice is cooked, remove the saucepan from heat, stir in 1 teaspoon of vanilla extract and top with your favourite dried fruits.
