Sweet Potato Curry Rice

This one pot recipe is perfect for a week night dinner and even better eaten for lunch the next day. A tasty dish with little effort.

Ingredients

Sweet Potato Curry Rice

  • 1 1/2 cups of Basmati rice (washed)
  • 1 Sweet Potato chopped into cubes
  • 1 Medium white onion diced
  • 1 Small red onion diced
  • 2 tsp Garlic granules 
  • 1 tbsp Paprika 
  • 1/4tsp Ground ginger
  • 1 tsp Chilli powder 
  • 1\2 tsp Turmeric 
  • 1 tsp Cumin
  • 1/2 tsp Coriander 
  • 1/2 tsp Ground Coriander
  • 1 1/2 tsp Salt 
  • 1/2 tsp Ground cinnamon 
  • 1 tbsp Palm sugar 
  • 1 tbsp Coconut Oil
  • 2 cups Boiling water 

     

    Method
    1. In a medium sized pot, fry red and white onions until soft
    2. Add all spices and fry for a further 1-2 minutes
    3. Add rice and 2 cups of boiling water
    4. Cover with lid and leave to cook on a low-medium for 20-30 minutes
    5. Mix and serve
