Sweet Potato Curry Rice
This one pot recipe is perfect for a week night dinner and even better eaten for lunch the next day. A tasty dish with little effort.
Ingredients
Sweet Potato Curry Rice
- 1 1/2 cups of Basmati rice (washed)
- 1 Sweet Potato chopped into cubes
- 1 Medium white onion diced
- 1 Small red onion diced
- 2 tsp Garlic granules
- 1 tbsp Paprika
- 1/4tsp Ground ginger
- 1 tsp Chilli powder
- 1\2 tsp Turmeric
- 1 tsp Cumin
- 1/2 tsp Coriander
- 1/2 tsp Ground Coriander
- 1 1/2 tsp Salt
- 1/2 tsp Ground cinnamon
- 1 tbsp Palm sugar
- 1 tbsp Coconut Oil
- 2 cups Boiling water
Method
- In a medium sized pot, fry red and white onions until soft
- Add all spices and fry for a further 1-2 minutes
- Add rice and 2 cups of boiling water
- Cover with lid and leave to cook on a low-medium for 20-30 minutes
- Mix and serve
