Pesto and Cherry Tomato Pasta

Cook the organic conchigliette. In a separate pan, sauté cherry tomatoes in olive oil until they start to burst. Toss the cooked conchigliette with red pesto, and mix in the sautéed cherry tomatoes. Serve with a sprinkle of cashew parmesan cheese and basil.

Salad with Lemon-Dill Dressing

Boil the organic conchigliette until just past al dente, then rinse with cold water and drain. In a bowl, mix the cooked conchigliette with diced cucumber, cherry tomatoes, feta cheese, and chopped fresh dill. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, and salt to make the dressing. Pour the dressing over the salad and toss to combine. Serve chilled as a refreshing summer side dish.

Conchigliette Stuffed Bell Peppers

Prepare the organic conchigliette. In a separate bowl, mix the cooked conchigliette with cooked mushrooms or lentils, marinara sauce, and shredded plant-based cheese. Cut bell peppers in half and remove the seeds. Stuff the pepper halves with the conchigliette mixture and top with more cheese. Bake in the oven until the peppers are tender and the cheese is melted and bubbly. Serve as a main with a side of salad.

The History of Organic Conchigliette

The history of organic conchigliette pasta dates back to ancient Italy, where pasta-making has been a tradition for centuries. Conchigliette, meaning "little shells" in Italian, has been a beloved shape in Italian cuisine for its ability to hold sauces and ingredients. The organic food production gained momentum in the 20th century, leading to the creation of organic conchigliette pasta, made from durum wheat grown without synthetic pesticides or fertilisers. This pasta embodies the heritage of Italian culinary craftsmanship and the modern ethos of sustainable, organic farming. Its rich history and traditional roots make it a staple in both Italian and global kitchens.
