The pistachio tree is believed to be native to Iran but it is widely cultivated in the Mediterranean region, the Middle East and California. Pistachios are harvested by using a machine to shake the trees so that the nuts fall to the ground and then these are collected. Machines then remove the hull and the nuts are then washed and sorted according to size, quality, appearance and whether the shell is open. These are then dried in hot air to reduce humidity. If being sold unshelled then the shell is removed.
